We use a four-stage sharpening process to produce razor-sharp, slightly convex edges, using 220 grit for shaping (when necessary), 1000 grit for sharpening, 3000 grit for honing, and 12000 grit for stropping and polishing.
Compared to a typical flat-ground factory edge, a convex edge provides superior durability and decreased resistance when cutting.
As a rule, we sharpen vegetable-specific knives and razors to 12°, Japanese-style chef knives, boning, and fillet knives to 15°, western-style chef knives, paring, and utility knives to 18°, pocket knives to 20°, hunting knives, cleavers, and other heavy-duty blades to between 22° and 40° depending on the application.
Our process
Just about anything with an edge — kitchen knives, outdoor knives, scissors, chisels, axes, even shovels (your snow shovel might be tearing up your deck — ask me how I know). We’ll handle basically everything except severely damaged knives, traditional single-bevel Japanese knives, strange serrations, and other anomalies.
